Pan Roasted Barramundi on Cheese Grits with Sea Beans and Balsamic Reduction
Salt and pepper the fish, and cook over medium high heat in a little bit of olive oil until brown, then flip and throw in a 400 degree oven for eight to ten minutes. At the same time, reduce some balsamic way down over medium heat until it's really thick and syrupy, and in another pan, fry up thick slices of bacon sliced into one inch pieces until browned, then add sea beans.
Cook grits with half water and half milk, then stir in some mozzerella, salt and pepper, top with the fish and then the beans and then the balsamic.
